Spanish crumb cake

CRUMB CAKE! CRUMB CAKE! CRUMB CAKE!

I've always loved this snack. It's a wonderful salty mixture of soft crumbs and a crunchy base made of the most basic ingredients, it's incredible! We call it "torta de migas", "coca de migas", "torta de mollitas", ... It goes by many names.

I used to have it all the time when I was a kid, whenever me and my friends went to one of their houses to hang out and play Wii. Her mom would always make this and we were all so hyped about it. This is a recipe I've found that really resembles the end result! It's in Spanish so I'll do my best to translate it below :-)

Steps

  1. (For base): Put all ingredients in a bowl and mix well until a uniform dough has formed.
  2. Put the dough in a baking tray with oven-safe parchment. Spread the dough out through the surface, it should be thinly spread but make sure it doesn't break apart.
  3. (For crumbs): Put all ingredients in a bowl and mix with your hands. You might have to add another tablespoon of flour so the crumbs aren't as sticky and break apart well.
  4. Spread your crumbs all over the base. It's better if you also cut it up before baking it rather than afterwards.
  5. Bake at 180ºC (360ºF) for 20 minutes.
